Yields: About 7-8 crepes depending on the size of your pan.
1 cup unbleached all purpose flour
1 Tablespoon granulated sugar
2 teaspoons baking powder
pinch of salt
dash of cream of tartar
1/4 teaspoon vanilla extract
1 cup water
Peel and largely dice the apples and add them to a pot. Sprinkle the apples with cinnamon and sugar. Toss the apples to evenly coat. Pour in enough water to make a thin layer on the bottom of the pot. Let simmer on medium heat on the stove until tender. Once done, remove from heat and set aside.
To make the crepes, whisk all ingredients together in a large bowl until all lumps are gone and the mixture is a thin batter.
Heat a round porcelain pan on the stove on a medium heat. Spray with non stick cooking spray and pour 1/4 cup batter into the pan. Quickly rotate the pan using your wrist to spread out the batter into the thin crepe.
Cook for about 1 minute and then flip to brown it's other side. Cook the remaining side for 1 minute. Remove from heat.
Serve by adding some of the hot apples to the open crepe then rolling the crepes shut. Add a spoon of hot apples to the tops of the crepes and sprinkle with cinnamon. Finish it off by drizzling maple syrup or pure local honey on top!
* Don't get frustrated if the first crepe comes out as a fail. It may a couple tries to get that swing of it.
* I made sure to spray non stick cooking spray on the pan before making each new crepe.
* Depending on how dark you want the color of your crepes to be, you may need to adjust the heat to a lower/higher setting. (I kept my gas on medium low as I like lighter colored crepes).
* I kept the cooked crepes warm by staking them on a plate and covering it with aluminum foil.
