Sweet Grapefruit Waffles

Serves: six 4 x 4 inch waffles

 

Ingredients:

  • 1 cup whole wheat flour

  • 1 Tablespoon granulated sugar

  • 1 1/2 teaspoons baking powder

  • a pinch sea salt 

  • 1 cup dairy free milk

  • 2 Tablespoons allergy free butter substitute, melted

  • 1 egg replacer 

Vanilla nicecream:

  • frozen ripe bananas

  • 1/4 teaspoon 100% pure vanilla extract

Toppings:

  • 1 red grapefruit

  • raw local honey or maple syrup

 

Directions:

  1. Spray your waffle maker with non-stick spray and heat to temperature.

  2. In a large bowl, add the flour, sugar, baking powder, and salt. Whisk together.

  3. In a separate smaller bowl, whisk together the milk, allergy free butter substitute, and egg replacer.

  4. Pour the wet mixture into the dry ingredients and stir until just combined.

  5. Let the batter sit for 3-5 minutes and then pour into your waffle maker. Cook the waffles according to the instructions for your waffle maker.

  6. Add frozen bananas and vanilla extract into a food processor blending until creamy. 

  7. Plate the waffles with a scoop of vanilla nicecream on top. Peel and slice the grapefruits and place on top. Drizzle with raw local honey or maple syrup.
