
Vegetable Stuffed Peppers
Serves: 4 people Ingredients: 2 Tablespoons olive oil 1 clove garlic 1 small yellow onion, diced 1 small red onion, diced 1, 12 oz bag of cauliflower rice Sea salt and black pepper to taste 1 can organic small kidney beans or black beans Dried cilantro to taste Chili powder to taste Lime juice to taste 1 medium tomato 4 bell peppers Directions: Preheat oven to 375°F. Heat a large pan on medium heat. Once hot, add 1 tablespoon olive oil, garlic, yellow onion, and red onion. Sa
