Ginger Honey Stir Fry


Serves: 3-4 people

Ingredients:

Stir Fry:

  • broccoli - 1 small head

  • bell peppers - green, red, yellow, orange (1 of each)

  • corn - 2 freshly boiled cobs

  • brown rice - 1 cup dry to make about 3 cups cooked

  • 3 chicken breasts - sliced into thin strips

Dressing:

  • 2 Tbsp raw local honey

  • 2 Tbsp extra virgin olive oil

  • 1/2 tsp lemon juice

  • pinch to 1/8 tsp ground ginger

Directions:

  1. Wash all the vegetables. Slice the bell peppers into 1 inch thick strips. Cut away the stems and core of the broccoli head. Add all the vegetables to a skillet and add a layer of water to the bottom of the pan. Let steam until reaching your desired texture. I wait until I am able to stick a fork through the veggies.

  2. Remove from heat and drain. Place back on the stove and add in half of the ginger dressing and saute' until the veggies are coated with the dressing and golden brown. Remove from heat.

  3. Slice the chicken breasts into thin strips and add to a preheat skillet on medium heat. Add in the other half of the dressing. Saute' until golden brown and fragrant.

  4. Add the chicken to the veggie skillet and saute' once more all together until well combined. Remove from heat.

  5. To serve, scoop about 1 cup cooked brown rice onto the plate. Then add the stir fry on top! Drizzle with more dressing if desired.
