1 large beet, boiled and peeled
1 can organic great northern white beans
1 Tablespoon extra virgin olive oil
2 teaspoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon paprika
1. Place all ingredients into a food processor and blend until it is a smooth and creamy consistency.
1. Dip fresh vegetables into the hummus - some of my favorites re bell peppers, cucumbers, celery, and carrots.
2. Spread hummus onto your favorite bread topping with sliced avocado, sea salt, and cracked black pepper.
3. Top your buddha bowl with a dollop of hummus for extra favor and protein.
