Savory Veggie Oatmeal

Serves: 1 person

 

Ingredients:

  • 1 cup chicken broth (I use Pacific)

  • 1/2 cup whole grain rolled oats

  • 1/8 teaspoon sea salt

  • 1/8 teaspoon black pepper

  • 1/4 teaspoon ground parsley

  • 1/2 cup grape tomatoes

  • 1 handful fresh spinach

  • 1 Tablespoon sea salt pumpkin seeds (I use SuperSeedz)

 

Directions:

  1. Wash the tomatoes and slice in half. Wash the spinach. Set aside.

  2. Add the chicken broth, oats, sea salt, pepper, and parsley to a small pot. Stir together to incorporate all ingredients. Bring to a boil on the stove over medium heat and reduce to a simmer. Cook the oats for 5 mins or until they reach the desired consistency. Remove from the heat and pour the oats into a serving bowl.

  3. Microwave the spinach for 30 seconds or until wilted. Add the spinach and the tomatoes to the top of the oats. Sprinkle the top of the oats with pumpkin seeds for extra crunch.
