Mini Mermaid Donuts


There is no doubt that I have had a mermaid obsession ever since I was a baby and I am a mermaid at heart.

Combining my love for baking and these magical mystical sea creatures, I whipped up these tasty donuts. Iced with pastel colors, laced in adorable decorations, and deliciously fresh baked, these mini vanilla donuts are a great summer treat!

Serves: 24 mini donuts

Ingredients:

  • 1 cup all purpose flour

  • 6 Tablespoons granulated sugar

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt (if using an unsalted allergy free butter substitute)

  • 6 Tablespoons dairy free milk

  • 1/2 teaspoon apple cider vinegar

  • 1 teaspoon 100% pure vanilla extract

  • 1 egg replacer

  • 1 Tablespoon allergy free butter substitute, melted

Directions:

  1. Preheat the oven to 425°F.

  2. In a mixing bowl, sift in the flour, sugar, baking powder, and salt (if using).

  3. In a separate bowl, pour in the non dairy milk and apple cider vinegar. Stir together and let sit for 2 minutes. The vinegar will begin to curdled the dairy free milk and resemble the properties of a buttermilk. Add the vanilla extract, egg replacer, and melted allergy free butter substitute and whisk together.

  4. Pour the wet mixture into the dry ingredients. Beat together with either a hand mixer or stand mixer until a smooth batter forms. Be careful not to over beat the batter as this could lead to chewier donuts.

  5. Grease a nonstick mini donut pan and pour the batter into the molds evenly. Aim to fill all 12 donut molds halfway full- remember the donuts will rise in the oven. Even distribution of the batter ensures even baking. Bake for 8 minutes or until the donut tops spring back when pressed lightly.

  6. Remove from the oven and allow the donuts to cool for 5 minutes in their pan before laying them onto a wire rack for complete cooling. Make sure the donuts are completely cooled before decorating them.

  7. To make the icing, mix together powdered sugar and room temperature water until you reach a thick liquid consistency. I made 3 different icing colors: pastel blue, pastel pink, and lavender to have a fun variety of mermaid themed icings. Once iced, I sprinkled Wilton White Sugar Pearls Sprinkles and Wilton Gold Stars Edible Accents on top of the donuts.
