Lemon and Dill White Bean Hummus
One 15 ounce can of organic white beans, drained and rinsed
1/4 cup fresh dill (loosely packed)
2 Tablespoons lemon juice
1 Tablespoon extra virgin olive oil
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Place all ingredients into a food processor and process until it is a smooth and creamy consistency.
Adjust the amount of seasonings to your liking. If you want a thinner hummus, add 1 tablespoon of warm water.
Spoon out the hummus into a bowl and feel free to garnish with fresh lemon zest and a sprig of fresh dill. Serve with fresh vegetables like carrots, celery, sweet peppers, or cucumbers. Toasted pita chips pair nicely as well.
