Vegetable Protein Burger


Ingredients:

  • 1 cup organic quinoa, cooked

  • 1 large sweet potato, cooked

  • 3 Tablespoons breadcrumbs

  • 1/2 cup cooked kidney beans or beans of choice

Directions:

  1. Mash the beans with a potato masher and add to a large bowl. Add in the rest of the ingredients.

  2. Combine all ingredients together using your hands and form 3-4 patties.

  3. Heat a frying pan on high heat and drizzle with a small amount of olive oil. Cook the patties until golden brown and and slightly crispy. Remove from the heat and serve or store in the refrigerator for up to 3 days.
