Vegetable Protein Burger
1 cup organic quinoa, cooked
1 large sweet potato, cooked
3 Tablespoons breadcrumbs
1/2 cup cooked kidney beans or beans of choice
Mash the beans with a potato masher and add to a large bowl. Add in the rest of the ingredients.
Combine all ingredients together using your hands and form 3-4 patties.
Heat a frying pan on high heat and drizzle with a small amount of olive oil. Cook the patties until golden brown and and slightly crispy. Remove from the heat and serve or store in the refrigerator for up to 3 days.
