Basic Whole Wheat Waffles


This morning, I first opened my eyes at 10:30am. After seeing how rainy the sky was and being too cozy in my bed, I decided to sleep until 12:30pm. Lazy mornings rolling into lazy afternoons call for a nice homemade brunch. I love waking up and making a gourmet brunch spread with my pjs still on and dancing around my kitchen to music even if it's just for myself. Let me know if you can relate!

Serving Size:

This recipe makes about 1 2/3 cups of waffle batter. I cannot say how many waffle you will be able to make out of this since everyone has a different waffle maker. However, I can tell you that I made 5 single squared waffles from this batter.

Ingredients:

  • 1 cup white whole grain flour

  • 1 Tablespoon sugar

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 cup non-dairy milk

  • 2 Tablespoons vegetable oil

  • 1 egg replacer

Directions:

  1. Spray your waffle maker with non-stick spray and heat it up.

  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.

  3. In a separate smaller bowl, whisk together the non-dairy milk, oil, and egg replacer.

  4. Slowly pour the wet mixture into the dry bowl and stir until just combined.

  5. Let the batter sit for about 3-5 minutes and then pour into your waffle maker. Cook the waffles according to the instructions for your waffle maker.

I served my waffles with cut up orange and banana slices, sprinkled with cinnamon, and honey on the side for dipping.
