Overnight oats is a fantastic, easy, and delicious way to have a nutritious breakfast. I've always loved overnight oats and have grown a new appreciation for them as I was enrolled in 7:00 a.m. classes at university. This being said, I needed something quick to grab in the morning when stuck in a hazy dream filled state. Overnight oats is prepared the night before being eaten leaving, placed in the refrigerator to chill and soften overnight, and can be enjoyed both warm or cold in the morning. Overnight oats are very convenient for living in a dorm as you do not need any appliances to make them nor do you need a kitchen. Serves: one
Fresh Fruit Overnight Oats
Ingredients:
1/2 cup old fashioned rolled oats
1/2 cup dairy free milk
1/3 ripe banana
2 large strawberries
1/4 cup blueberries
cinnamon to taste
Directions:
In a container, add the oats, non-dairy milk, fruit, and cinnamon. Mix until combined. Cover and store in the refrigerator overnight. Remove from the refrigerator in the morning, stir, and enjoy. You can always heat the oats in the microwave for 1-2 minutes.
Serves one:
Banana Bread Overnight Oats
Ingredients:
1/2 cup old fashioned rolled oats
1/2 cup dairy free milk
1/2 ripe banana, mashed
1/8 teaspoon 100% pure vanilla extract
cinnamon to taste
Directions:
In a container, add the oats, dairy milk, mashed banana, vanilla extract, and cinnamon. Mix until combined. Cover and store in the refrigerator overnight. Remove from the refrigerator in the morning, stir, and enjoy. Optionally, heat the oats in the microwave for 1-2 minutes.

Apple Cinnamon Overnight Oats
Ingredients:
1/2 cup old fashioned rolled oats
1/2 cup dairy free milk
1 large apple, diced
1/8 teaspoon 100% pure vanilla extract
cinnamon to taste
Options for extra sweetness:
1 tablespoon raisins - I love adding golden raisins.
1 teaspoon raw local honey
Directions:
With a sharp knife, cut the apple into small chunks. In a container, add the oats, dairy free milk, diced apple, vanilla extract, and cinnamon. Mix until combined evenly. Cover and store in the refrigerator overnight. Remove from the refrigerator in the morning, stir, and enjoy. Heating the oats in the microwave for 1-2 minutes before eating enhances all of the amazing flavors, especially in this recipe!
