Apple Cherry Oat Bake


Looking for the perfect transition flavors for summer to fall? You have to try this apple cherry baked oatmeal recipe! The baked berries bring a reminiscent aroma of the summer months while the scent of warm apples excite us for the early fall season. These oats are perfect to grab for breakfast on busy mornings or even a nutritious dessert. This recipe is also top 8 food allergen free and vegan.

Serves: 6 portions

Ingredients:

  • 1 cup sweet cherries, fresh or frozen, pitted and quartered

  • 1 1/2 cups applesauce, unsweetened

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon ground cinnamon

  • 3/4 teaspoon baking powder

  • 1 cup non dairy milk

  • 2 cups old fashioned rolled oats, uncooked

  • allergy free butter substitute or non stick cooking spray for greasing

Directions:

  1. Add the apple sauce, vanilla extract, cinnamon, and baking powder into a bowl. Mix until combined and then mix in the non dairy milk until the batter is smooth.

  2. Remove the pits and quarter cut the cherries. Add the cherries and oats to a separate larger bowl. Mix together.

  3. Pour the wet batter into the dry ingredients mixing together until a thick mixture forms.

  4. Lightly grease an 8 x 8 inch baking pan and pour the mixture inside, smoothing it into an even layer.

  5. Bake in the oven at 375°F for 40-45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

This recipe can be eaten chilled or warm but is best served warm. A little bit of chilled non dairy milk poured over the top tastes delicious and for some extra sweetness, drizzle the top with some raw local honey or pure maple syrup. You can store the the leftovers in the refrigerator and warm it up in the microwave when ready to eat.
